Sweet tooth
Hydnum repandum
A species of Dentinum. Also known as Hedgehog mushroom, Yellow toothed fungus.
This mushroom stands out due to the spines, or teeth, that project downwards from the bottom of its cap. It grows on forest floors, appearing either individually or in clusters. Despite being called 'sweet tooth,' its flavor profile includes a subtle spicy note and a bitter finish. This wild mushroom requires cooking to become safely consumable, and only young, healthy specimens free from parasites should be collected.
